my new favorite dressing/dip

so I made this dressing the other day and let me tell you it is FABULOUS! If you like avocados, this is where it’s at, baby. it was part of a bigger salad recipe, but this is the only part i made. i'll try the salad at some point in the future, but it's got a lot of expensive greens in it that we have no business spending money on these days..

(I’m typing this from memory, so forgive me if I miss a thing or two…)

1 ripe avocado, pitted, peeled and diced
½ c mayonnaise
½ c plain yogurt
1 shallot, chopped (i'm sure green onions would suffice in a pinch)
3 T chives, chopped
fresh tarragon (not sure how much, I didn’t have it so I used dried marjoram)
3 T white wine vinegar or white balsamic (I used red wine viniegar without the world collapsing beneath me)
salt
pepper
¼ c water

Place all ingredients EXCEPT water in blender or food processor. Pulse to break stuff up. Then turn on the machine and drizzle the water in while it is running until the dressing/dip is smooth.

NOTE: do not be alarmed if you add vanilla yogurt instead of plain and you don't realize it until you've licked the spoon you used to add the yogurt to the ingredients because the plain and vanilla yogurts were really close to one another in the dairy aisle in the supermarket and the packages look practically the same, fer christ's sake. simply scoop out as much of the vanilla yogurt as you can and give it to a nearby three year old. then, if there is not a drop of plain yogurt to be found in the house, add a bit of milk. (i plan to try again with plain yogurt sometime soon...)

aren't scallions and green onions the same thing?
